We’ve got a 15 minute wonder here that uses the humble cous cous, a highly under rated store cupboard staple in my opinion. I’ve been really enjoying throwing it in salads for a quick lunch that goes with pretty much anything – but this particular courgette embellishment must be my favourite so far. It’s wholesome, refreshingly simple and everything here is easy enough to get hold of at your local shop. It’s brilliant for putting on the table and sharing amongst a family meal, but also great if you’re alone and love a leftover. Hope you like the video!

a marvellous 15 minute lunch that brings a little taste of summer to the table; great if you’re having it as part as a family BBQ, also great if you’re alone and enjoy a good leftover (and this just so happens to taste even better the next day). enjoy lads! FULL RECIPE👇🏻 . 200g cous cous 200 ml veg stock 1 courgette 1/2 red onion, thinly sliced 1 clove garlic, minced 1 bunch mint leaves, chopped 1/4 jar of olives 1/2 lemon Olive oil Salt and pepper feta cheese pine nuts . make the cous cous by pouring the stock over the dry grains in a large bowl. stir well, cover with a plate and leave for 10 mins. boil the courgette whole (chop in half if it can’t fit in the pan) for no longer than one minute. thinly slice and mix with the red onion, 3/4 of the mint leaves, garlic, lemon juice, olive oil, salt, pepper & pine nuts. mix feta cheese with the zest of the lemon. fluff the cous cous with a fork, then top with the courgette mix, olives, and more mint, pine nuts & olive oil. serve up!✨
