A Really Simple Butter Bean Dip
  • 1 tin butter beans
  • 2 cloves garlic, finely chopped
  • handful fresh parsley
  • 1 tsp ground cumin
  • juice of half a lemon
  • 2 tbsp a good olive oil
  • salt and pepper, to taste
  1. Heat some 1 tbsp of oil in a pan and add the butter beans with the garlic, cumin, salt, pepper and lemon juice. Keep stirring on a medium heat until well heated through - and add a splash of water to stop it sticking. Put the lid on and let it all heat through for 5-10 minutes. Eh, let's go with 7 minutes just for the lols.
  2. Grab a hand blender and splash in the olive oil. Smash it all up until it forms a paste, adding in a little water if you want it thinner. Give it a taste and be sure to add more seasoning if you like it saltier.
  3. Serve up!
