If you’ve been staring at a tin of butter beans in your cupboard for a while, then may I suggest you do something like this with it?
Once made – spread on toast topped with roasted tomatoes, add in to pittas with halloumi or if you’re feeling really wild – you can dip your crisps in to it. We are living in ”unprecedented times” after all…
- 1 tin butter beans
- 2 cloves garlic, finely chopped
- handful fresh parsley
- 1 tsp ground cumin
- juice of half a lemon
- 2 tbsp a good olive oil
- salt and pepper, to taste
- Heat some 1 tbsp of oil in a pan and add the butter beans with the garlic, cumin, salt, pepper and lemon juice. Keep stirring on a medium heat until well heated through - and add a splash of water to stop it sticking. Put the lid on and let it all heat through for 5-10 minutes. Eh, let's go with 7 minutes just for the lols.
- Grab a hand blender and splash in the olive oil. Smash it all up until it forms a paste, adding in a little water if you want it thinner. Give it a taste and be sure to add more seasoning if you like it saltier.
- Serve up!
