Chicks dig a dip; especially when it’s this fresh, this tasty and this versatile. Try making a bowlful of this creamy white bean and spinach dip when you next get a chance and keep it at hand for a quick snack to go with crudites, tortillas or perhaps if you’re feeling really fancy – a spread on your favourite toast! Just think of it as hummus’ smoother, more mellow cousin – the underdog who always comes out tops when no one can stand the loudness of the hummus for a second more.
Serves: 2 as a snack; one for lunch
What you need:
1 tin of organic cannellini beans
1 clove garlic, minced
1 large handful spinach
1 handful fresh herbs (try basil and parsley together… SO good!)
Juice of half a lemon
4 tbsp. extra virgin olive oil
Salt and pepper
Crudités of choice (fennel, carrots, cucumber, celery)
What you need to do:
Drain the beans from the tin, and add to a blender or food processor with all of the other ingredients. You may want to add a little water to make for easier blending. Whizz up until completely smooth, and serve up with your crudités. Simple and oh so satisfying.
